With the Outlook Add-in you can manually adjust the logging behavior of Weflow's activity algorithm.
Search for records, change the Opportunity, set required fields on the event object.
The Outlook Add-in should be provisioned by a Microsoft 365 admin and then be pinned to Outlook.
